A Cheese-Loving Bibliophile Writes

I ooze my way over to young Robyn's Library Thing and am utterly astonished to learn that there are - incredible as this may seem - some 243,515 books more popular than the classic
"Great Grilled Cheese: 50 Innovative Recipes for Stove Top, Grill and Sandwich Maker"

I am aghast!

Let us right this injustice to the art of cheese-grilling without delay.

I've said it before and I'll say it again:

Take a good, locally baked baguette and tear it in two, lengthwise (don't cut it, it's just not the same).

Grill it very lightly on the torn side, then properly on the crusty side.

Crumble over it far more Stilton than is decent and grill it again until it just starts to melt.

Spoon copious amounts of mango chutney over the cheese and grill again until it is bubbling and the edges of the baguette are crisping.

Stick it in your mouth and enter Heaven.

Do not - EVER (and I cannot stress this strongly enough) substitute crappy Danish Blue for Stilton. That's like substituting Cheese-Whizz for Brie.
